    nihongo Hishi mochi is a symbolic wagashi Japanese sweet associated with the Hinamatsuri Girl s Day festival, which coincides with the calendar date for Xiuxi . The sweet is rhomboid in shape and typically formed from three layers of red pink , white, and green mochi , from top to bottom. Depending on region, the red may be substituted with yellow, or the sweet may have 5 or 7 layers instead. It is usually presented with hina doll s. The shape is believed to have originated in the Edo period , and a representation of fertility. Colors The red of the mochi are derived from fruits of Gardenia jasminoides , and is symbolic of plum flowers. The white is made from the water caltrop , and represents the snow and its cleansing effects. The style of sakuramochi differs from the regions in Japan. Basically, the east of Japan such as Tokyo uses nihongo shiratama ko rice flour and the west side such as Kansai uses nihongo d my ji ko glutinous rice flour for batter. Recipe This recipe is for making Western style sakuramochi. Serves 8. Ingredients 3 4 cup glutinous rice flour 1 3 cup sugar 1 cup water 3 4 cup red bean paste red food coloring optional 8 sakura leaves pickled in salted water Preparation Wash pickled sakura leaves and dry. Boil water in a pan. Mix glutinous flour in the water. Cover the pan with a lid and leave it for 5 minutes. Place a wet cloth in a steamer and put the dough on the cloth. Steam the dough for about 20 minutes over medium heat. Remove the steamed dough to a bowl. Mash the dough slightly with a wooden pestle, mixing sugar into the dough. Dissolve a little bit of red food color in some water. Add some of the red water in the dough and mix well. Divide the pink mochi into 8 balls. Flatten each mochi ball by hand and place red bean paste filling on the dough. Wrap the filling with mochi and round by hand. Wrap each mochi with a sakura leaf. Usage Girl s Day Sakuramochi is traditionally eaten on Girl s Day also known as Hinamatsuri in Japan, on March 3rd. American Sidney Gulick , a missionary in Japan , initiated an exchange of doll s between children as a way to ease cultural tensions in 1920s. Japanese Viscount Eiichi Shibusawa responded by initiating a program to send 58 dolls to American museums and libraries. Overview The Immigration Act of 1924 prohibited East Asians from immigrating to the United States , which increased tension between the US and Japan. Dr. Sidney Gulick was a former missionary who spent time in Japan between 1888 and 1913.
