The solid sugar crust is formed from a supersaturated sugar solution with a filling of choice. The crust completely seals the filling, allowing it to be coated with a layer of chocolate in a process called enrober enrobing . Preparation of Sugar Encrusted liqueurs Sugar crusts are formed by pouring filling into moulds prepared of starch referred as starch moulds . The moulds are about room temperature. The surface of the liquid that is exposed to the air is dusted with starch. After approximately two hours, crusts form. These crusts are flipped and left to stand in starch for twenty four hours. After standing for this period of time, the resulting shells are ready to be enrober enrobed in chocolate. For 100 weight parts of 60 alcohol liqueur, use 60 weight parts of sugar. If you use a lower percentage of alcohol, add food grade 96 alcohol to make up for the difference. Dissolve the sugar by heating it to 120 F. Cool the sugar to 60 F and pour liquid into the starch moulds. Preparation of starch moulds Pour a layer of starch about 1.5  inches thick onto a sheet and level it flat without compressing it. Hot water crust is traditionally used for making hand raised pies. As the name suggests, the pastry is made by heating water, melting the fat in this, bringing to the boil, and finally mixing with the flour. This can be done by beating the flour into the mixture in the pan, or by kneading on a pastry board. Either way, the result is a hot and rather sticky paste that can be used for hand raising shaping by hand, sometimes using a dish or bowl as an inner mould. As the crust cools, its shape is largely retained, and it is filled and covered with a crust, ready for baking. Hand raised hot water crust pastry does not produce a neat and uniform finish, as there will be sagging during the cooking of the filled pie. This is generally accepted as the mark of a hand made pie. It is possible, however, to bake the pastry in a mould, as with other pies. When baked, the crust acquires a rich, shiny, golden brown exterior, which is fairly crisp and water resistant. This allows the pies to be filled with a savoury aspic jelly or gravy as they cool, often through a central hole in the crust made expressly for the purpose during raising. As it contains lard , it is unsuitable for vegetarian s. Vegetable fat or shortening can be substituted in equal measure, but the texture of such a crust will be slightly different and mouthfeel will be somewhat lighter as shortening lacks the grain of lard.
